Use a movement ledger
Opening inventory plus processed inflow minus shipments and transfers gives an expected closing balance. Survey or scale differences can then be investigated as a variance instead of being hidden in production.
Preserve source dates
A load mined on Sunday and sold on Monday belongs to different operational and billing timelines. Keep the mining, processing and shipment events separately dated.
In practice
Opening 2,000 tons + 4,000 produced - 3,500 shipped = 2,500 expected closing tons, subject to measurement variance.
